Sardines Are Esthetic Now. Here's How To Actually Eat Them.

Sardines are SO good for the skin; giving you a big dose of Omega 3's, which are healthy fats that make the skin glow. They are very anti-inflammatory, full of Vitamin D, and antioxidants (coQ10 to be specific)! But seeing them in the can is a little unappetizing. Here's an easy and delicious summer dinner to promote good skin.
Sardine Patties
Ingredients:
2 cans of sardines (in oil or water, drained)
1 small onion, finely chopped
1/4 cup all-purpose flour
1/4 cup cornmeal (whole grain or gluten free)
2 eggs
1–2 tbsp olive oil (plus more for cooking)
Salt and pepper to taste
Optional Add-ins: minced garlic, chopped parsley, a splash of lemon juice, or a dash of hot sauce for extra flavor.

Instructions:
1. Prep the mix:
In a large bowl, mash the sardines with a fork. Add chopped onion, flour, cornmeal, eggs, olive oil, salt, and pepper. Mix until well combined. The mixture should hold together—if too wet, add a little more flour or cornmeal.
2. Shape patties:
Form into small patties (about 2–3 inches wide).
3. Cook:
Heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes on each side, or until golden brown and crispy.
4. Serve:
Enjoy hot with a squeeze of lemon, a dipping sauce, or over salad or rice.
